The 1A version of the 7805 is a VERY STANDARD part, still available and current from MANY manufacturers, even though you some how ended up on a mouser page for an obsolete part Try the "512-LM7805act" instead:

Hi again, I'm going to answer my own query in case anyone else needs to know: The 50K B dual linear Alpha pot can be substituted by Digikey number P2A5503-ND or by the Mouser numbers 317-2201F-50K (M9x0 75 bushing so file the panel hole bigger or file off the screw thread), or Mouser number 317-2200F-50K if you can avoid damaging the pot shaft
